Mastering the art

One trial after the other, I have finally mastered the art of making muffins.  It took me four or five attempts to perfect it and now I can make it in less than forty minutes, provided my ingredients are ready. I never thought I would ever shell out recipes, at least not in my blog. Well, here I am today to help out those interested. When I started baking, I followed quite a few recipes and youtube videos and I found out that most of them were wrong about the quantity. The issues I faced ranged from too buttery to too sweet or bland looking muffins. So after weeks of trials, here goes-

RECIPE FOR PLAIN MUFFINS
Ingredients: 2 cups of flour, 1 packet castor sugar (bluebird, comes at 30/-), 200 gms butter, 2 eggs, 2 tbsp baking powder and 1 tbsp baking soda, 1 tbsp vanilla extract.

Step 1: Melt the butter, add sugar and vanilla extract. Let it cool for 10-15 mins.
Step 2: Heat the oven in ‘toast’ mode at maximum temperature for 10 mins.
Step 3: Take the flour in a big bowl, add baking powder and soda. Make a well and add the 2 eggs and the mixture from Step 1.
Step 4: Blend the batter well, such that no dry flour is left. Fill the muffin tray upto 3/4th level.
Step 5: Bake the muffins at 175 degrees for 15 mins. They should be done just perfect.
 *Tip: Don’t open the oven door to check mid-way through the baking. Wait for the full length of time.

So this was my recipe for baking near perfect muffins. You can also improvise by making choco-chip muffins or blueberry muffins. All you need to do is add the extra ingredient during Step 3. I went on a baking spree a few days back and this was the result. Enjoy.
